easyWhy tonight. Roast carrots until they candy at the edges.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- carrot
- lentils
- cumin
- lemon
- olive oil
Good if you have them, fine if you do not: yogurt.
Method
- Roast the carrots hard at 220C with cumin until the edges are properly dark. Steamed carrots make a limp salad.
- Cook the lentils separately in salted water and drain them while they still have bite — mushy lentils ruin the texture.
- Dress the lentils while warm, the carrots when they come out of the oven, then combine.
- Yogurt underneath rather than mixed through, and lemon over the top at the table.

What the method is trying to make happen
Sequence, correction, heat and texture, equipment workarounds, scaling, and component reuse are available with this cook sheet.
An educational plan from a curated corpus. Not a nutrition, allergen, or doneness guarantee.
Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.

Why each of these is on the list
What the ingredients are actually doing
- carrot
- Sweetness that survives long cooking, which is why it sits under so many braises.
- lentils
- The fast legume — no soaking, thirty minutes at most.
- cumin
- Earthy and slightly bitter, and it needs heat to open.
- lemon
- Acid you add at the end, not the start.
- olive oil
- Two ingredients sharing a name.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
