easyWhy tonight. Rub the hot toast with a cut clove, cheese first as a moisture barrier, tomato on top. Assemble it a minute before it is eaten.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- bread
- tomato
- mozzarella
- basil
Good if you have them, fine if you do not: olive oil.
Method
- Toast the bread and rub the hot surface with a cut clove of garlic. The heat does the work and it is a different thing from chopped garlic.
- Salt the tomato slices on the board first and let them sit while the bread toasts.
- Mozzarella torn on, then tomato, then oil. Cheese first is a moisture barrier for the bread.
- Basil and flaky salt last. Assemble it a minute before it is eaten or the bread gives up.

Why each of these is on the list
What the ingredients are actually doing
- bread
- Structure, thickener, and the reason a lot of these dishes stretch.
- tomato
- Sweet, sour and savory at once, which is why it holds up so many dishes with no meat in them.
- mozzarella
- Stretch and mildness. Fresh mozzarella is wet and will make anything baked soggy unless it is drained and torn; the low-moisture kind melts better and tastes of less.
- basil
- Perfume rather than flavor, and heat destroys it.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Caprese
Only worth making in tomato season. Salt the slices on the board first, tear the mozzarella rather than slicing it, and the oil goes on last.

Caprese pita
Salt the tomato, drain the mozzarella, and oil the inside of the pocket so the juice does not go straight through the bread.

Tomato mozzarella pasta
Drain the mozzarella and tear it, or it thins the sauce to pink milk. It should end up in strings and pockets, never melted through.

Pappa al pomodoro
Tuscan bread-and-tomato porridge. Stale bread, more oil than you think, basil. It should be a spoon food, not a soup with croutons.
