Method
- Tomatoes cooked in olive oil with garlic until they burst and the sauce goes glossy rather than watery. Ten minutes.
- Drain the mozzarella and tear it. Straight from its water it will thin the sauce into pink milk.
- Pasta into the pan with a splash of its water, tossed, then the mozzarella off the heat.
- It should be in strings and pockets, not melted through. Basil torn over at the table.
