Method
- Only in tomato season. Out of season this is a plate of cold water and rubber, and no amount of good oil fixes it.
- Slice tomatoes thick, salt them, and let them sit five minutes on the board so they weep and season themselves.
- Alternate with torn mozzarella — torn, not sliced, so the ragged edges hold oil.
- Olive oil last, over everything, and basil torn by hand. A knife bruises basil black at the cut.
