- 2 oz cognac, ¾ oz lemon, ¾ oz simple syrup, shaken hard and strained up.
- Cognac carries more sugar of its own than whiskey does, so pull the syrup back to ½ oz if the bottle is a sweeter VS.
- Egg white belongs here more than in most sours — brandy is soft and the foam flatters it.
- Lemon peel expressed over the top, no cherry.
