Method
- 2 oz Aperol, ¾ oz lemon, ¼ oz syrup only — Aperol is already sweet and the usual sour ratio will bury it.
- Egg white, dry shaken then shaken with ice, is close to compulsory here: it softens the bitterness into something round.
- Double-strain up and let the foam settle.
- Bitters dashed on the head. Low in alcohol, pink, and considerably more serious than it looks.
