easyWhy tonight. Amaretto, lemon and egg white. Amaretto is very sweet on its own, so this needs more lemon than a standard sour.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- amaretto
- lemon
- simple syrup
Method
- 1½ oz amaretto, ¾ oz bourbon, 1 oz lemon, egg white, a bar spoon of simple syrup only if the lemon is fierce.
- The bourbon is not optional. Amaretto alone is a liqueur with lemon in it; the whiskey is what makes it a drink.
- Dry shake, then shake with ice, then strain over a big cube.
- Angostura dashed on the foam. Almond wants bitters more than nearly anything else does.

Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- amaretto
- Almond-scented and very sweet, so it functions as the sugar in a drink rather than as an addition to it.
- lemon
- Acid you add at the end, not the start.
- simple syrup
- Sugar already dissolved, which is the only form of sugar that works in a cold drink.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Shares lemon, simple syrup
Aperol sour
Aperol carries its own bitterness, so this needs less sugar than a standard sour. Egg white makes it look like sunset.
Shares lemon, simple syrup
Brandy sour
The sour template on cognac, which is rounder and more fruit-driven than whiskey. It takes less sugar than you expect.
Shares lemon, simple syrup
Rye sour
A whiskey sour with the sweetness pulled back by the grain. Rye and lemon are sharper together than bourbon and lemon ever are.
Shares lemon, simple syrup
Scotch sour
Lemon against scotch, which is sharper and smokier than a bourbon sour. A little honey suits it better than plain syrup.
