Method
- 2 oz rye, ¾ oz lemon, ¾ oz simple syrup. Shake hard with ice until the tin is painful to hold.
- Strain up, or over one big cube if you would rather it opened up slowly.
- Rye is drier and more peppery than bourbon, so it takes the sugar better. If you are used to a bourbon sour this will taste sharper — that is correct.
- Egg white if you want the texture, dry shaken first. It adds no flavor and changes everything about the mouth.
