Method
- The chicken is poached, never browned. A blanquette is defined by having no color in it at all.
- Mushrooms cooked separately in butter with lemon so they stay pale, then added at the end.

- Egg yolk and lemon whisked in off the heat at the very end if you want it properly rich. Never boil after that.
