Method
- Slice the onions thin and toss them with sumac, salt and lemon, then leave them half an hour while you work. They go from raw to sharp and sweet.
- Salt and dry the chicken, brown it skin down, and take it out underdone.
- The onions into the pan with the fat and cooked until they collapse, then the chicken back on top and the lid on until it is through.
- More raw sumac over it at the table. Sumac cooked into a dish gives color; sumac added at the end gives the sourness you actually want.
