Method
- Grind the coffee to a powder, finer than espresso — it is never filtered, so the grind is the texture.
- Cold water, coffee and sugar together in the pot from the start. Sugar added afterwards will not dissolve.
- Bring it up slowly and pull it off the moment the foam rises. Twice more if you are patient.
- Pour the foam into the cup first, then the rest. Let it settle two minutes and do not drink the bottom.
