Method
- Warm the glass with hot water first and tip it out. A cold glass ruins this before you start.
- 1½ oz Irish whiskey, two teaspoons of brown sugar, hot strong coffee, stirred until the sugar is completely gone.
- Cream lightly whipped — thickened but still just pourable — floated over the back of a spoon.
- You drink it through the cream, so it must never be stirred in. Sugar is structural here, not sweetness: without it the cream sinks.
