Method
- Roast the sweet potato rather than boiling it, so it arrives dry and concentrated instead of waterlogged.
- Brown the butter separately until the solids turn amber and it smells of nuts, then pull it off — ten seconds later it is burnt.
- Crush the roasted flesh into the butter with thyme, then loosen with pasta water into a sauce.
- Nutmeg and parmesan off the heat. Sweet potato is sweet and both are there to argue with it.
