Method
- Roast the squash hard and dry at 220C until the edges caramelize. Steamed squash makes a watery, flat sauce.
- Brown the butter separately: keep it moving until the solids turn amber and it smells of nuts, then take it off immediately.
- It goes from brown to burnt in about ten seconds, so pull it early and let the residual heat finish it.
- Squash crushed roughly into the butter, pasta water to loosen, sage or thyme, parmesan and nutmeg at the end.
