Method
- Loosen the peanut butter with hot water first until pourable. Straight into the pan it seizes and catches.
- Chili and garlic warmed in the oil before the peanut goes in.
- Fold it through hot rice off the heat, never in a hot pan — peanut sauce splits and goes oily above a simmer.
- Lime at the end and again at the table. Peanut is heavy and needs the acid twice.
