Spicy Paloma

easyWhy tonight. A slice of jalapeño, not a handful. Soda last.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- tequila
- grapefruit
- lime
- jalapeno
Good if you have them, fine if you do not: soda, smoked salt.
Method
- Two or three slices of jalapeño pressed gently in the tin — pressed, not pulverized, or you get bitter green.
- 2 oz tequila and ½ oz lime shaken with them, then double-strained over fresh ice so no seeds ride along.
- Grapefruit soda to top, or fresh grapefruit and soda if you want to control the sugar.
- Salt the rim. Salt is what keeps heat from reading as merely hot, and this drink is the clearest demonstration of that on the list.
An educational pour, not a reprint of a licensed spec. No allergen or alcohol-safety claim.
Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- tequila
- Agave, which brings a vegetal, peppery edge no other spirit has.
- grapefruit
- Bitter as well as sour, which makes it the one citrus that can carry a drink on its own.
- lime
- Sharper and more floral than lemon, and it fades faster — juice it the same hour you use it.
- jalapeno
- Heat that lives in the ribs and seeds, not the flesh, so you can dial it precisely by how much you take out.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
