Method
- Muddle two or three slices of jalapeño gently in the tin — press, do not pulverize, or you get bitter green.
- 2 oz tequila, ¾ oz lime, ¾ oz Cointreau. Shake and double-strain so no seeds ride along.
- Taste before you strain. Chilies vary wildly and heat builds in the shaker while you work.
- Salt on the rim matters more here than in a plain margarita — it is what keeps the heat from reading as just hot.
