Method
- 2 oz blanco tequila and ¾ oz lime in a tall glass full of ice, topped with cold sparkling mineral water.
- One gentle lift with a spoon. Anything more and you have poured away the bubbles.
- Everything cold before it goes in the glass, the tequila included, because warm spirit melts ice and dilutes on contact.
- Three ingredients, no sugar at all, and it is the best hot-afternoon drink there is.
