Method

  1. 2 oz blanco tequila and ¾ oz lime in a tall glass full of ice, topped with cold sparkling mineral water.
  2. One gentle lift with a spoon. Anything more and you have poured away the bubbles.
  3. Everything cold before it goes in the glass, the tequila included, because warm spirit melts ice and dilutes on contact.
  4. Three ingredients, no sugar at all, and it is the best hot-afternoon drink there is.
