easyWhy tonight. Spanakopita filling, no pastry required.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- spinach
- feta
- eggs
- dill
- scallion
Good if you have them, fine if you do not: butter.
Method
- Wilt the spinach and squeeze it genuinely dry, in a cloth. This is the whole difference between the dish and a wet pan.
- Cook the scallion first so it loses its water too.
- Feta broken in by hand and eggs beaten through, then baked until just set with a wobble.
- No extra salt until you have tasted it. Feta is brined and usually gets there alone. Dill at the end.

What the method is trying to make happen
Sequence, correction, heat and texture, equipment workarounds, scaling, and component reuse are available with this cook sheet.
An educational plan from a curated corpus. Not a nutrition, allergen, or doneness guarantee.
Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
The technique underneath this
- Pan sauceTurning what stuck to the pan into a sauce. Two minutes of work at the end of something you already cooked.watery · too salty · greasy · broken · bitter
- Pie doughKeeping butter in visible pieces and gluten underdeveloped, which is the exact opposite of bread and trips everyone once.tough · shrank in the tin · greasy · cracked when rolled · soggy bottom
Going wrong while you cook it? Say what it is doing and the triage will tell you what is happening, the smallest move, and the instinct to resist.

Why each of these is on the list
What the ingredients are actually doing
- spinach
- Volume that vanishes. A pan-filling pile cooks down to a few spoonfuls, and the water it gives up will dilute whatever it lands in unless you wring it out first.
- feta
- Salt and tang in crumbles, so it seasons while it garnishes.
- eggs
- The cheapest way to turn a side dish into dinner.
- dill
- Grassy and slightly anise, and it belongs to cold food more than hot.
- scallion
- Two ingredients on one stalk.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
Cooks from the same box
If you bought for this, you can already make these
Shares eggs, spinach, feta
Spinach feta breakfast wrap
Squeeze the spinach dry or the tortilla turns to paper. Warm the wrap first, fill the lower third, and seal it seam-side down.
Shares eggs, spinach, feta
Spinach feta scramble
The spinach before it weeps. Wilt and drain it properly first — that step is the whole difference between this and a wet plate.
Shares eggs, spinach, dill
Kuku sabzi
Herb frittata. More green than egg. Don't rush it or it weeps.
Shares spinach, feta, eggs
Börek
Filled pastry, spinach and feta, egg wash. Oil between the layers if you can. Don't make a spanakopita and argue about the shape.
Next
Cook it, then tell the shelf what you used.
The ranking is only as honest as the shelf behind it. Empty the cream, and everything that leaned on cream should stop being offered.
