Method
- Herbs and spinach chopped very fine and, crucially, dried well. This is mostly greens held together by egg, so water is the enemy.
- Eggs beaten with a spoon of flour and a great deal of salt, then the greens folded through until it looks more green than yellow.
- Low heat, generous oil, lid on, twenty-five minutes until set.
- Flip it or finish it under a broiler. It should be dark green through and a little crisp at the edge, and it is better at room temperature.
