mediumWhy tonight. Smothered, not boiled. Frozen shrimp go in at the end so they stay plump.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- shrimp
- onion
- celery
- bell pepper
- butter
- stock
Good if you have them, fine if you do not: rice, hot sauce.
Method
- Roux first: equal butter and flour cooked to the color of peanut butter, stirred constantly, ten to fifteen minutes.
- It burns the moment you stop stirring, and burnt roux means starting again — there is no rescuing it.
- The trinity in next, onion celery and pepper, which cools the roux and stops it cooking further.
- Shrimp last, three minutes only, off the boil. Étouffée means smothered and the sauce should coat rather than pool.

Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- shrimp
- Cooks in about two minutes and is ruined in three.
- onion
- The base under most of this library.
- celery
- Salinity and a bitter green edge, which is why it sits in so many bases without ever being the point.
- bell pepper
- Sweetness and water. Raw it is crunch, blistered under a broiler it goes silky and smoky and stops tasting like a salad bar — that char is most of the reason to buy them.
- butter
- Flavor and body in the same spoonful.
- stock
- Body, not flavor — that is the part people get backwards.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
Cooks from the same box
If you bought for this, you can already make these
Shares celery, onion, stock
Celery stock soup
Uses the celery before it slumps. Onion, butter, stock. Potato if you want body. It should taste like celery, not water.
Shares onion, celery, butter
Herb bread stuffing skillet
Stale bread, aromatics, enough stock to moisten not drown. Thyme or sage if you have it.
Shares shrimp, onion, celery
Shrimp creole
Trinity plus tomato. Shrimp at the end. Hot sauce is seasoning, not a dare.
Shares onion, celery, bell pepper
Chicken and sausage gumbo
The trinity first, then stock. Gumbo is a stew you eat over rice, not a soup you rush.
Next
Cook it, then tell the shelf what you used.
The ranking is only as honest as the shelf behind it. Empty the cream, and everything that leaned on cream should stop being offered.
