easyWhy tonight. Stale bread, aromatics, enough stock to moisten not drown. Thyme or sage if you have it.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- bread
- onion
- celery
- butter
- stock
Good if you have them, fine if you do not: thyme, parsley.
Method
- Bread torn, not cubed, and left out overnight or dried in a low oven. Fresh bread turns to paste.
- Onion and celery cooked in a great deal of butter until completely soft — twenty minutes, and this is where the flavor is.
- Stock added slowly until the bread is heavy and wet but not swimming. Press it and it should hold together.
- Into a hot buttered skillet, pressed flat, and baked uncovered until the top is properly crisp. The contrast between the crust and the soft middle is the dish, and a covered dish gives you neither.

What the method is trying to make happen
Sequence, correction, heat and texture, equipment workarounds, scaling, and component reuse are available with this cook sheet.
An educational plan from a curated corpus. Not a nutrition, allergen, or doneness guarantee.
Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
The technique underneath this
- Pan sauceTurning what stuck to the pan into a sauce. Two minutes of work at the end of something you already cooked.watery · too salty · greasy · broken · bitter
- StockPulling gelatin and flavor out of bones and aromatics without pulling out the things that make it cloudy and bitter.thin and watery · cloudy · bitter · greasy
Going wrong while you cook it? Say what it is doing and the triage will tell you what is happening, the smallest move, and the instinct to resist.

Why each of these is on the list
What the ingredients are actually doing
- bread
- Structure, thickener, and the reason a lot of these dishes stretch.
- onion
- The base under most of this library.
- celery
- Salinity and a bitter green edge, which is why it sits in so many bases without ever being the point.
- butter
- Flavor and body in the same spoonful.
- stock
- Body, not flavor — that is the part people get backwards.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Cook it, then tell the shelf what you used.
The ranking is only as honest as the shelf behind it. Empty the cream, and everything that leaned on cream should stop being offered.
