Method
- Celery sliced thin, leaves kept back, and cooked in butter with the onion over low heat with a lid on for twenty minutes without color.
- Stock in, simmered fifteen minutes, then blended completely smooth and passed through a sieve if you want it elegant.
- Celery is stringy and a blender does not solve that; the sieve does, and it takes two minutes.
- Butter whisked in off the heat, the reserved leaves on top. Absurdly good for something made out of the thing everybody throws away.
