Method
- Wilt the spinach, then squeeze it dry in a towel and chop it. Whole leaves in a spiced sauce are stringy and impossible to eat politely.
- Onion browned properly in fat, then ginger, garlic and cumin bloomed until they smell sweet rather than dusty.
- Spinach back in with a splash of water and cooked down until it is dark and thick.
- Butter or cream at the end, off the heat. Saag is a fat delivery system and under-fatted saag tastes like boiled greens.
