easyWhy tonight. Frozen spinach is correct here.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- lentils
- spinach
- onion
- cumin
- garlic
Good if you have them, fine if you do not: lemon.
Method
- Lentils simmered with turmeric and salt until they lose their shape completely. Undercooked dal is grainy and no amount of finishing fixes it.
- Frozen spinach in for the last five minutes, squeezed of its water first.
- In a separate small pan, cumin and garlic bloomed in hot fat until they smell sweet and the garlic is gold.
- Pour that fat over the dal so it hisses, and stir it in at the table. That is the tarka, and it is the entire difference between dal and lentil mush.

What the method is trying to make happen
Sequence, correction, heat and texture, equipment workarounds, scaling, and component reuse are available with this cook sheet.
An educational plan from a curated corpus. Not a nutrition, allergen, or doneness guarantee.
Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
The technique underneath this
- VinaigretteDispersing fat into acid so it stays dispersed for as long as dinner takes, which is all it has to do.separates immediately · greasy · too sharp · dull
- Building a sourSpirit, citrus and sugar in a fixed geometry, then adjusted for how strong the particular bottle in front of you is.thin and sharp · cloying · spirit disappears · no foam
Going wrong while you cook it? Say what it is doing and the triage will tell you what is happening, the smallest move, and the instinct to resist.

Why each of these is on the list
What the ingredients are actually doing
- lentils
- The fast legume — no soaking, thirty minutes at most.
- spinach
- Volume that vanishes. A pan-filling pile cooks down to a few spoonfuls, and the water it gives up will dilute whatever it lands in unless you wring it out first.
- onion
- The base under most of this library.
- cumin
- Earthy and slightly bitter, and it needs heat to open.
- garlic
- Burns in seconds and turns the whole dish bitter, so it almost never goes in first.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
