easyWhy tonight. Reduce rum and sugar until it coats. Lime at the end so it is not candy.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- chicken
- rum
- lime
- sugar
- chili flakes
Good if you have them, fine if you do not: thyme.
Method
- Reduce the rum, sugar and lime in a separate pan until syrupy. Raw rum in a glaze tastes harsh.
- Sear the chicken dry and unsauced first, all the way to real color.
- Glaze in the last three minutes, turning. Sugar plus alcohol burns fast and it will if you glaze early.
- Chili and thyme at the end, and lime again over the top.

Why each of these is on the list
What the ingredients are actually doing
- chicken
- Two different foods depending on the cut.
- rum
- The widest spirit on the shelf.
- lime
- Sharper and more floral than lemon, and it fades faster — juice it the same hour you use it.
- sugar
- Not just sweetness — it balances acid and bitterness, which is why a sour drink and a tomato sauce both want a little.
- chili flakes
- Heat you can dose. Bloomed in oil they spread through everything; scattered at the table they stay sharp and sit on top. Same flakes, two different dishes.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
Cooks from the same box
If you bought for this, you can already make these
Shares chicken, chili flakes, lime
Red curry chicken
Redder and louder than yellow. Chili bloomed in coconut, fish sauce, lime, basil if you have it. It should stain the rice. Don't make a tomato curry.
Shares chicken, lime, chili flakes
Jerk chicken skillet
Allspice would be traditional; cinnamon, thyme, chili, and lime get you there. Char the edges.
Shares lime, chili flakes
Chili lime corn
Frozen corn charred hard in a dry pan, then butter, chili and lime. Boiled corn tastes canned; charred corn tastes like summer.
Shares lime, sugar
Fish sauce slaw
The slaw that belongs on grilled meat.
