easyWhy tonight. Redder and louder than yellow. Chili bloomed in coconut, fish sauce, lime, basil if you have it. It should stain the rice. Don't make a tomato curry.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- chicken
- coconut milk
- chili flakes
- fish sauce
- lime
Good if you have them, fine if you do not: basil.
Method
- Fry the paste in a few spoonfuls of the thick coconut cream until the oil separates. Never start it in a dry pan.
- Chicken sealed in that fried paste before the rest of the coconut milk goes in.
- A bare simmer for fifteen minutes. Hard boiling splits coconut milk permanently.
- Fish sauce, lime and basil off the heat. Cooked basil goes black and tastes of hay.

What the method is trying to make happen
Sequence, correction, heat and texture, equipment workarounds, scaling, and component reuse are available with this cook sheet.
An educational plan from a curated corpus. Not a nutrition, allergen, or doneness guarantee.
Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
The technique underneath this
- Pan sauceTurning what stuck to the pan into a sauce. Two minutes of work at the end of something you already cooked.watery · too salty · greasy · broken · bitter
- Roasting a whole birdTwo muscles that want different temperatures, cooked in one piece. Every method is a way of managing that conflict.dry breast · underdone thigh · flabby skin · burnt wingtips
Going wrong while you cook it? Say what it is doing and the triage will tell you what is happening, the smallest move, and the instinct to resist.
Published minimums for what is in this
These are published minimums, not doneness preferences and not a verdict about any particular piece of food. Ground meat sits above whole cuts of the same animal because grinding moves the surface through the middle — the species is not the reason.

Why each of these is on the list
What the ingredients are actually doing
- chicken
- Two different foods depending on the cut.
- coconut milk
- Fat that carries chili and spice further than water can, with a sweetness underneath.
- chili flakes
- Heat you can dose. Bloomed in oil they spread through everything; scattered at the table they stay sharp and sit on top. Same flakes, two different dishes.
- fish sauce
- Salt and deep savoriness, and it smells far stronger than it tastes once it is in something.
- lime
- Sharper and more floral than lemon, and it fades faster — juice it the same hour you use it.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Shares chicken, coconut milk, fish sauce
Panang curry
Thicker than a green curry. Peanut in the coconut, fish sauce, lime. It should cling, not soup. Don't make satay and pour it over rice.

Green curry chicken
Bloom curry in a little coconut cream, then the rest of the can. Basil off the heat.
Shares chicken, coconut milk, lime
Tom kha gai
Coconut, lime, ginger, fish sauce — galangal would be right, ginger is Tuesday. Chicken in the broth, not boiled to shreds. Chili at the table. Don't make a yellow curry and call it tom kha.

Island coconut shrimp
Shrimp last so they curl, not rubber. Coconut and lime, not breading.

Cook it, then tell the shelf what you used.
The ranking is only as honest as the shelf behind it. Empty the cream, and everything that leaned on cream should stop being offered.
