Method
- Spoon the thick coconut cream off the top of the can. Bloom curry powder in that fat until it smells sweet.
- Add the rest of the coconut, then chicken. Eggplant if it is there can collapse into the sauce.
- Fish sauce and lime at the end. Basil off the heat so it stays green.
