What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- pinto beans
- onion
- cumin
- butter
Good if you have them, fine if you do not: lime.
Method
- Onion cooked slowly in a generous amount of fat until soft and sweet, cumin bloomed in it.
- Beans in with a good splash of their liquid, then mashed against the pan with the back of a spoon.
- Keep cooking and keep adding liquid. They should look far too loose, because they set hard as they cool.
- Salt at the end, and taste for fat before you taste for salt. Under-fatted refried beans taste flat and people reach for the salt instead, which does not fix it.

What the method is trying to make happen
Sequence, correction, heat and texture, equipment workarounds, scaling, and component reuse are available with this cook sheet.
An educational plan from a curated corpus. Not a nutrition, allergen, or doneness guarantee.
Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
The technique underneath this
- Pan sauceTurning what stuck to the pan into a sauce. Two minutes of work at the end of something you already cooked.watery · too salty · greasy · broken · bitter
- Pie doughKeeping butter in visible pieces and gluten underdeveloped, which is the exact opposite of bread and trips everyone once.tough · shrank in the tin · greasy · cracked when rolled · soggy bottom
Going wrong while you cook it? Say what it is doing and the triage will tell you what is happening, the smallest move, and the instinct to resist.

Why each of these is on the list
What the ingredients are actually doing
- pinto beans
- Softer and earthier than black beans, and they break down willingly, which makes them the right bean when you want the pot to thicken itself.
- onion
- The base under most of this library.
- cumin
- Earthy and slightly bitter, and it needs heat to open.
- butter
- Flavor and body in the same spoonful.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Cook it, then tell the shelf what you used.
The ranking is only as honest as the shelf behind it. Empty the cream, and everything that leaned on cream should stop being offered.
