Method
- Rinse the quinoa properly under cold water for a minute. The coating on it is bitter and rinsing is the only way off.
- Cook it in salted water, drain, and let it steam dry with a lid off the heat for five minutes so the grains separate.
- Dress the quinoa while warm with lemon and oil. Cold grain takes on nothing.
- Chickpeas, cucumber and feta in once it has cooled. Warm dressing on cold ingredients is the right order, not the reverse.
