easyWhy tonight. High heat, a single layer. Cheese in the last minutes so it crisps, not burns.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- potato
- parmesan
- olive oil
- garlic
Method
- Parboil the potatoes until the edges just give, then drain and shake them roughly in the pan to rough up the surfaces.
- Toss with oil, garlic and half the parmesan.
- Onto a hot tray in a single layer, cut faces down, and do not turn them for twenty minutes.
- The rest of the parmesan for the last five minutes so it crisps rather than burns. Salt as they come out.

Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- potato
- Waxy holds its shape, floury falls apart, and almost every potato complaint is the wrong one for the job.
- parmesan
- Salt, fat and savory depth in a form that keeps for months.
- olive oil
- Two ingredients sharing a name.
- garlic
- Burns in seconds and turns the whole dish bitter, so it almost never goes in first.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
