Method
- Chop the olives by hand rather than blitzing them. A processor turns tapenade into a grey purée in three seconds.
- Garlic, olive oil, and anchovy if you have it, worked in with a fork until it is a rough spoonable paste.
- Taste before adding anything salty. Olives and anchovy together are already at the ceiling.
- On hot toast, and a squeeze of lemon over the top. It is very rich and very salty and acid is the only thing that lengthens it.
