Method
- Stale bread torn small, sprinkled with salted water and left covered for an hour. This is not optional — dry crumbs fry into gravel.
- A lot of olive oil, garlic cloves whole and lifted out once golden, then the paprika off the heat so it does not scorch.
- Crumbs in and turned patiently for twenty minutes until every one is crisp and separate.
- Fried eggs on top. Entirely different dish from the Mexican one with the same name, and both are worth knowing.
