easyWhy tonight. Smash beans while they are warm.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- white beans
- bread
- rosemary
- olive oil
- garlic
Good if you have them, fine if you do not: lemon.
Method
- Garlic and rosemary warmed slowly in a lot of olive oil first, until the oil tastes of both. Five minutes on low.
- Beans in with some of their liquid and warmed through, then crushed roughly with a fork against the pan.
- Half crushed, half whole, is the texture that stays on toast. Fully smooth is a dip, fully whole rolls off.
- Thick toast rubbed with raw garlic, beans on, lemon and more oil over. Salt at the end.

Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- white beans
- Creamy enough to thicken what they are in — mash a ladleful against the side of the pot and the whole dish gains body.
- bread
- Structure, thickener, and the reason a lot of these dishes stretch.
- rosemary
- Pine and resin, and strong enough to take over.
- olive oil
- Two ingredients sharing a name.
- garlic
- Burns in seconds and turns the whole dish bitter, so it almost never goes in first.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
