easyWhy tonight. Chewy grain against creamy bean, with rosemary warmed slowly in oil first. Use some of the bean liquid — that starch is the sauce.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- white beans
- farro
- rosemary
- olive oil
- garlic
Good if you have them, fine if you do not: lemon.
Method
- Rosemary and sliced garlic warmed slowly in a lot of olive oil until the oil tastes of both. Five minutes on low.
- Farro cooked separately in well-salted water and drained while it still has bite.
- Beans in with some of their liquid, a third of them crushed against the pan for body.
- Combined off the heat with lemon and more oil. It is better warm than hot and better still the next day.

The technique underneath this
- VinaigretteDispersing fat into acid so it stays dispersed for as long as dinner takes, which is all it has to do.separates immediately · greasy · too sharp · dull
- Building a sourSpirit, citrus and sugar in a fixed geometry, then adjusted for how strong the particular bottle in front of you is.thin and sharp · cloying · spirit disappears · no foam

Why each of these is on the list
What the ingredients are actually doing
- white beans
- Creamy enough to thicken what they are in — mash a ladleful against the side of the pot and the whole dish gains body.
- farro
- Chew that survives dressing, which is why it makes a better cold grain salad than rice does.
- rosemary
- Pine and resin, and strong enough to take over.
- olive oil
- Two ingredients sharing a name.
- garlic
- Burns in seconds and turns the whole dish bitter, so it almost never goes in first.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
