easyWhy tonight. Wilt the spinach and drain it hard, because wet greens under melting cheese is a puddle. Salt at the end, once it has shrunk.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- spinach
- mozzarella
- garlic
- olive oil
Good if you have them, fine if you do not: bread.
Method
- Wilt the spinach with garlic in olive oil, then drain it hard. Wet spinach under melting cheese is a puddle.
- Mozzarella torn and drained on a towel for a minute, because it carries more water than it looks like it does.
- Spinach on the bread, cheese on top, under a hot grill until it blisters.
- Salt at the end. Spinach shrinks to a tenth of its volume and concentrates any salt you put on it early.

Why each of these is on the list
What the ingredients are actually doing
- spinach
- Volume that vanishes. A pan-filling pile cooks down to a few spoonfuls, and the water it gives up will dilute whatever it lands in unless you wring it out first.
- mozzarella
- Stretch and mildness. Fresh mozzarella is wet and will make anything baked soggy unless it is drained and torn; the low-moisture kind melts better and tastes of less.
- garlic
- Burns in seconds and turns the whole dish bitter, so it almost never goes in first.
- olive oil
- Two ingredients sharing a name.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Only worth making in tomato season. Salt the slices on the board first, tear the mozzarella rather than slicing it, and the oil goes on last.

Caprese pita
Salt the tomato, drain the mozzarella, and oil the inside of the pocket so the juice does not go straight through the bread.
