Method

  1. Soak the rice in water with a cinnamon stick overnight — no cooking anywhere in this drink.
  2. Blend the soaked rice with its water, then strain through a cloth. The straining is the whole job and rushing it leaves grit.
  3. Milk and honey stirred into the strained liquid, then chilled hard.
  4. It separates as it stands, which is normal. Stir it again before pouring rather than trying to prevent it.
