Method
- Warm the apple juice with a cinnamon stick to just below a simmer and hold it there ten minutes.
- Never boil it. Boiling apple juice tastes stewed and flat, and the aromatics go up the chimney.
- Honey and lemon off the heat, both of which lose their character in boiling liquid.
- It is a hot toddy with no whisky, and it is worth making on its own terms rather than as a substitute.
