Method

  1. Whisk the cocoa to a paste with a splash of cold milk first. Tipped into a full glass it floats in bitter lumps.
  2. Warm the rest of the milk and whisk it in gradually, off the boil.
  3. Salt is what turns cocoa from dusty to deep, and almost nobody adds it. A real pinch.
  4. Honey and vanilla off the heat, since both lose their aroma to a simmer.
