Method

  1. Whisk the miso into a spoonful of warm water until smooth before it meets anything cold.
  2. Grated ginger squeezed through your fingers, honey, lime.
  3. Miso brings salt and fermented depth, which is exactly what a zero-proof drink is usually short of.
  4. Add no salt until you have tasted it. Miso is already doing that job.
