Crispy chicken thighs
Skin down, don't touch, then finish.

easyWhy tonight. Skin down, don't touch, then finish.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- chicken
- olive oil
- lemon
- garlic
Good if you have them, fine if you do not: rosemary.
Method
- Salt the thighs and leave them uncovered in the fridge if you have an hour. Dry skin is the entire recipe.
- Skin down in a cold pan with a little oil, then bring it up to medium. Starting cold renders the fat instead of seizing it.
- Twelve to fifteen minutes without touching them. The skin releases when it is ready and not before.
- Flip for two minutes, then out. Garlic and lemon into the hot fat off the heat, and pour that over.

What the method is trying to make happen
Sequence, correction, heat and texture, equipment workarounds, scaling, and component reuse are available with this cook sheet.
An educational plan from a curated corpus. Not a nutrition, allergen, or doneness guarantee.
Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
The technique underneath this
- VinaigretteDispersing fat into acid so it stays dispersed for as long as dinner takes, which is all it has to do.separates immediately · greasy · too sharp · dull
- Pan sauceTurning what stuck to the pan into a sauce. Two minutes of work at the end of something you already cooked.watery · too salty · greasy · broken · bitter
Going wrong while you cook it? Say what it is doing and the triage will tell you what is happening, the smallest move, and the instinct to resist.
Published minimums for what is in this
These are published minimums, not doneness preferences and not a verdict about any particular piece of food. Ground meat sits above whole cuts of the same animal because grinding moves the surface through the middle — the species is not the reason.

Why each of these is on the list
What the ingredients are actually doing
- chicken
- Two different foods depending on the cut.
- olive oil
- Two ingredients sharing a name.
- lemon
- Acid you add at the end, not the start.
- garlic
- Burns in seconds and turns the whole dish bitter, so it almost never goes in first.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Cook it, then tell the shelf what you used.
The ranking is only as honest as the shelf behind it. Empty the cream, and everything that leaned on cream should stop being offered.
