Method
- A whole head of garlic, cloves peeled but whole, submerged in oil with the thyme and cooked at the barest heat until they are soft and pale gold. Twenty-five minutes, and it must not fry.
- Chicken salted and browned skin down in a separate pan, then the garlic and its oil poured over.
- Into a moderate oven together until the chicken is through.
- Lemon at the end and the cloves crushed into the pan juices. That oil is the actual product here — keep whatever is left for the rest of the week.
