What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- chicken
- lemon
- oregano
- olive oil
- garlic
Good if you have them, fine if you do not: potato.
Method
- Marinate the chicken in lemon, oregano, garlic and oil for an hour if you have it, twenty minutes if you do not.
- Into a hot roasting pan skin up, with the potatoes tossed in the same marinade around it.
- Hot oven, and baste once halfway with the pan juices and a little water so the lemon does not catch.
- Rest, then more raw lemon and dried oregano over it as it goes to the table. The cooked lemon gives depth; the raw lemon is what people taste.

What the method is trying to make happen
Sequence, correction, heat and texture, equipment workarounds, scaling, and component reuse are available with this cook sheet.
An educational plan from a curated corpus. Not a nutrition, allergen, or doneness guarantee.
Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
The technique underneath this
- VinaigretteDispersing fat into acid so it stays dispersed for as long as dinner takes, which is all it has to do.separates immediately · greasy · too sharp · dull
- Pan sauceTurning what stuck to the pan into a sauce. Two minutes of work at the end of something you already cooked.watery · too salty · greasy · broken · bitter
Going wrong while you cook it? Say what it is doing and the triage will tell you what is happening, the smallest move, and the instinct to resist.
Published minimums for what is in this
These are published minimums, not doneness preferences and not a verdict about any particular piece of food. Ground meat sits above whole cuts of the same animal because grinding moves the surface through the middle — the species is not the reason.

Why each of these is on the list
What the ingredients are actually doing
- chicken
- Two different foods depending on the cut.
- lemon
- Acid you add at the end, not the start.
- oregano
- One of the few herbs that is stronger dried than fresh, and the dried version is what most of these dishes want.
- olive oil
- Two ingredients sharing a name.
- garlic
- Burns in seconds and turns the whole dish bitter, so it almost never goes in first.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
