Method
- Sear the chicken hard and take it out. The pan fond is where the sauce comes from.
- Onion in the fat, then cranberries and orange juice, scraped and reduced.
- Cranberries burst and thicken the sauce themselves, so no flour is needed and none should go in.
- Taste before adding sugar — orange juice is usually sweet enough. Thyme and cold butter at the end.
