Method
- Fry the rice with onion, chicken and tomato paste until the paste darkens and stops tasting tinny. Two minutes, not thirty seconds.
- Shape it into a mound on the plate first, so your hands are free for the egg.
- Beat the eggs smooth and cook them in a buttered pan over low heat, stirring, until they are barely set — a soft sheet, not an omelette with color.
- Slide it over the rice and let it slump. The whole point is that the egg is loose enough to fall open when you cut it.
