What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- bread
- bacon
- lettuce
- tomato
- avocado
Good if you have them, fine if you do not: mayo.
Method
- Bacon from a cold pan so the fat renders, then the bread toasted in that fat.
- Mayonnaise both slices edge to edge. With avocado already in there it can be a thin layer, but it has to be there as waterproofing.
- Avocado sliced rather than mashed, and salted on the board. Mashed, it merges with the mayonnaise into one soft layer.
- Salt the tomato separately too. Two salted components and crisp bacon is what keeps this from being soft all the way through.

What the method is trying to make happen
Sequence, correction, heat and texture, equipment workarounds, scaling, and component reuse are available with this cook sheet.
An educational plan from a curated corpus. Not a nutrition, allergen, or doneness guarantee.
Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
The technique underneath this
- Yolk emulsions — mayonnaise and hollandaiseSuspending a great deal of fat in very little water, held there by the lecithin in an egg yolk.broke on the way up · broke on standing · scrambled · too thick to move
- Bread doughDeveloping gluten and letting fermentation do the flavor, which is mostly a matter of time rather than effort.dense · flat · gummy inside · tore during shaping · over-proofed
Going wrong while you cook it? Say what it is doing and the triage will tell you what is happening, the smallest move, and the instinct to resist.

Why each of these is on the list
What the ingredients are actually doing
- bread
- Structure, thickener, and the reason a lot of these dishes stretch.
- bacon
- Fat, salt and smoke, and the rendered fat is the more valuable half.
- lettuce
- Structure and water, and it is worth being fussy about.
- tomato
- Sweet, sour and savory at once, which is why it holds up so many dishes with no meat in them.
- avocado
- Fat with no cooking required — it does what butter or cream would do in a dish that has neither.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
Cooks from the same box
If you bought for this, you can already make these
Shares bread, bacon, lettuce
Turkey club sandwich
Leftover turkey and crisp bacon. Toast the bread in the bacon fat, and salt the tomato separately or the middle tastes of water.
Shares bacon, bread, lettuce
BLT
Bacon first so the fat seasons the bread. Tomato salted. Eat immediately or the lettuce weeps.
Shares lettuce, bacon, avocado
Cobb salad
Rows, not a toss. Chicken, egg, bacon, avocado, blue if you have it. A sharp dressing. Don't make a chopped salad and call it a Cobb.
Shares bread, tomato
Anchovy tomato toast
Anchovy melts if the toast is hot.

Cook it, then tell the shelf what you used.
The ranking is only as honest as the shelf behind it. Empty the cream, and everything that leaned on cream should stop being offered.
