What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- bacon
- bread
- lettuce
- tomato
- mayo
Method
- Bacon in a cold pan, brought up slowly. Rendered fat and crisp edges, not scorched outside and raw inside.
- Toast the bread in some of that fat. This is the step people skip and it is most of the sandwich.
- Mayonnaise on both slices, edge to edge. It is waterproofing as much as flavor — it keeps the tomato from soaking the bread.
- Salt the tomato slices on their own before they go in. Unsalted tomato tastes like water in a sandwich this salty.

Why each of these is on the list
What the ingredients are actually doing
- bacon
- Fat, salt and smoke, and the rendered fat is the more valuable half.
- bread
- Structure, thickener, and the reason a lot of these dishes stretch.
- lettuce
- Structure and water, and it is worth being fussy about.
- tomato
- Sweet, sour and savory at once, which is why it holds up so many dishes with no meat in them.
- mayo
- An emulsion, which means it is a delivery system for fat and acid at once.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
