easyWhy tonight. Campari, vermouth and soda over ice — the Negroni before gin was added, and about half the strength.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- campari
- sweet vermouth
- soda
Good if you have them, fine if you do not: orange.
Method
- 1½ oz Campari, 1½ oz sweet vermouth over ice, topped with soda.
- Orange slice, and a lot of ice — more than looks right, because a warm Americano is a sad drink.
- The whole point is that it is weak. It is what Italians drink before dinner because the drink is meant to make you hungry, not sideways.
- Add gin and you have a Negroni, which is a different job entirely.
An educational pour, not a reprint of a licensed spec. No allergen or alcohol-safety claim.
Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- campari
- Bitter, sweet and red, and it is not shy.
- sweet vermouth
- Fortified wine, which means it is perishable — an open bottle on a warm shelf is why so many home Manhattans taste dusty.
- soda
- Carbonation is a texture and it is the first thing you lose.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Campari soda
The simplest bitter drink there is, and the one that teaches you whether you actually like Campari.

Negroni Sbagliato
The mistaken Negroni — prosecco where the gin should be. Lower, lighter, and easier to drink two of.
Shares campari, sweet vermouth
Boulevardier
A Negroni that swapped gin for whiskey, and it wants a little more whiskey than equal parts to stand up to the Campari.

Mezcal Negroni
Campari and vermouth with smoke underneath. Mezcal is assertive, so pull it back slightly from equal parts the first time.

The ranking is only as honest as the shelf behind it. Empty the cream, and everything that leaned on cream should stop being offered.
