easyWhy tonight. The mistaken Negroni — prosecco where the gin should be. Lower, lighter, and easier to drink two of.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- campari
- sweet vermouth
- prosecco
Good if you have them, fine if you do not: orange.
Method
- 1 oz Campari, 1 oz sweet vermouth, stirred briefly over ice, then topped with prosecco.
- Sbagliato means mistaken: a bartender reached for sparkling wine instead of gin and the mistake turned out to be better in the afternoon.
- Wine goes in last and gets one lift, never a stir.
- It is lower in alcohol and higher in bubbles, which makes it the one on this list you can serve at four in the afternoon without wrecking the evening.
An educational pour, not a reprint of a licensed spec. No allergen or alcohol-safety claim.
Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- campari
- Bitter, sweet and red, and it is not shy.
- sweet vermouth
- Fortified wine, which means it is perishable — an open bottle on a warm shelf is why so many home Manhattans taste dusty.
- prosecco
- Bubbles and light fruit, and it is a top-up rather than a base — poured in early it goes flat before the drink is finished.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Americano
Campari, vermouth and soda over ice — the Negroni before gin was added, and about half the strength.

Boulevardier
A Negroni that swapped gin for whiskey, and it wants a little more whiskey than equal parts to stand up to the Campari.

Mezcal Negroni
Campari and vermouth with smoke underneath. Mezcal is assertive, so pull it back slightly from equal parts the first time.

Negroni
Equal parts gin, Campari and sweet vermouth, stirred over ice and never shaken. The orange peel is a third ingredient, not a decoration.
