Method

  1. Beat the ricotta with salt for a full minute, by hand or in a processor, until it goes from grainy to silk.
  2. That minute is the entire recipe. Straight from the tub it is a different and worse ingredient.
  3. Lemon zest into the cheese, juice only if you want it looser.
  4. Spread it thick on a plate with a spoon-back swirl, then oil and honey over. Black pepper heavily.
